Mom's Halibut Enchiladas |
My mom from Alaska brings us delicious sparkling halibut numerous times a year, and this is my favored recipe for the use of it. It's rich, creamy, and superb!
Ingredients :
- 2 kilos halibut
- ½ teaspoon seafood seasoning (together with Old Bay(R))
- 1 tablespoon lemon juice
- 1 teaspoon cold butter, thinly sliced
- 1 cup mayonnaise
- 1 cup bitter cream
- 1 cup cream cheese, softened
- 2 (4 ounce) cans diced inexperienced chiles
- 2 inexperienced onions, chopped
- 1 teaspoon chopped sparkling parsley
- salt and ground black pepper to taste
- 8 (eight inch) flour tortillas
- 1 cup heavy cream, or as wanted
- 1 cup shredded mozzarella cheese
- ¼ cup Parmesan cheese
