Onion Gravy for British Bangers and Mash |

- 3 medium onions, thinly sliced
- 1 tablespoon all-motive flour
- half cup red wine
- 1 (14.5 ounce) can hen inventory
- 2 teaspoons Dijon mustard

- salt and ground black pepper to flavor

- Melt butter in a heavy-bottomed pan over medium heat. Cook and stir onion inside the melted butter until softened, approximately 10 minutes.
- Reduce heat to low. Cover the pan and prepare dinner until onions are caramelized, stirring every now and then, approximately 20 minutes.
- Stir flour into the caramelized onions and prepare dinner for 1 minute.
- Pour red wine, fowl inventory (see Editor's Note), Dijon mustard, and Worcestershire sauce into the onion combination; simmer till sauce is thickened, stirring often, approximately 15 mins. Season with salt and black pepper.

- Substitute vegetable inventory to make a vegetarian model.
