Mr. Mason's Chili |
"My grandmother used to care for the Masons. Mr. Mason turned into a pioneer inside the roadside meals enterprise. He owned cafes in Kansas, Oklahoma, Missouri, and Arkansas that served chili and apple pie. He kept his chili recipe mystery for decades. He lived to be 107 years antique, and my grandma finally got his recipe."

- 1 onion, chopped
- 2 cloves garlic, chopped
- 1 tablespoon ground cumin

- Place the floor beef and half the chili powder into a large saucepan over excessive warmth, and cook dinner till meat is browned, breaking the meat aside into crumbles as it chefs, approximately 10 mins. Mix within the onion, and prepare dinner and stir till onion is softened, approximately 10 more minutes. Stir in garlic, and prepare dinner until aromatic, approximately 2 minutes. Stir in last chili powder, cumin, oregano, tomato paste, and cocoa powder, and cover pan.
- Reduce warmth to a simmer, and cook dinner till meat is soft and flavors have mixed, mixing enough water to make a thick chili, approximately 1 half of hours. Stir from time to time.
Notes :
- Mr. Mason served his chili spooned over pinto beans that were cooked with ham hocks. He insisted which you needed to use Gebhardt Chili Powder. He died in approximately 1965. I even have used the same recipe, substituting game, pork, hen, and turkey for the red meat, with extraordinary effects.
